Mediterranean Diet Orange and Fennel Salad

Ingredients

  • Dressing using the recipe provided.
  • Fennel-2.
  • Oranges- 2. One blood orange if possible.
  • Radish- 3.
  • Kalamata Olives- 8.
  • Optional: nuts dried fruit, cheese or other items.

Instructions

  • Start by placing the prepared fennel in a large serving bowl then drizzle part of the prepared dressing over the fennel and toss.
  • Next, prepare the oranges by cutting of the top and the bottom to make them flat. One half inch cut should be okay. Cut the oranges in half making two wheels. Remove the skin and slice the oranges into bite sized pieces. Place the orange pieces into the large serving bowl.
  • The radishes should be shaved for this recipe. After they have dried from being washed, us a mandolin or a knife to thinly slice or shave them. Then place the radishes into the large bowl. Also, add the olive slices.
  • Toss all of the ingredients in the large serving bowl with the remaining vinaigrette dressing and serve. Top with optional nuts and other ingredients if desired.
