Panna Cotta in Strawberry Sauce

Ingredients

  • Strawberries- 2 cups.
  • Soy milk– ½ cup divided.
  • Agar Agar– 1 ½ teaspoon.
  • Vegan Heavy Cream– 1 ¾ cup.
  • Sugar Alternative– equivalent to ½ cup of sugar. Plus one tablespoon for the sauce.
  • Water- 2 tablespoons.

Instructions

  • If you have not done so yet, prepare your strawberries by rinsing them, removing the stems and allowing them to drain. Also, prepare the glasses, jars or ramekins so that they will be ready for you to use.
  • In a saucepan over medium heat, combine the vegan heavy cream, the sugar alternative, and two tablespoons of the oat milk. Whisk the ingredients often as they heat and bring this to a boil.
  • Meanwhile, in a small bowl, dissolve the agar-agar in the remaining oat milk.
  • When the mixture in the saucepan begins to boil, whisk the agar-agar mixture into the saucepan. Whisk constituently for two minutes while it boils and then turn off the heat and remove the saucepan from the burner.
  • Use a kitchen funnel to evenly pour the heated mixture into each glass, jar, or ramekin. Allow this to cool to room temperature and then place them in the fridge for at least 2 hours.
  • To prepare the strawberry sauce, process the strawberries in a blender or food processor then transfer them to a small saucepan. Add the water and the remaining sugar alternative and cook on medium heat until thickened (10-12 minutes). Allow this to cool a bit before topping the panna cotta.

Recipe Notes

For this recipe you will need agar agar which is needed for the dessert to become firm. You will also need a vegan heavy cream such as coconut cream.
This recipe can be made and served in a small glass or jar.
Another option is to make your panna cotta in a ramekin. You can then remove it from the ramekin for serving.
