Mediterranean Diet Zucchini Ravioli

Ingredients

  • Zucchini- 2 average sized.
  • Feta or ricotta cheese- 1 cup.
  • Spinach- 2 cups
  • Mozzarella Cheese- ½ cup plus additional as desired for topping.
  • Tomato Sauce- 1 cup.
  • Garlic- 3 cloves minced and divided.
  • Olive Oil- 2 tablespoons divided.
  • Seasonings as desired. This can include Italian Seasonings Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
  • Optional ingredients include parmesan cheese and/or ground poultry or meat alternative.

Instructions

  • Prepare your zucchini as described .
  • In a skillet over medium heat, heat one tablespoon of the olive oil along with two of the minced garlic cloves (two teaspoons). Cook for about three minutes or until the garlic becomes fragrant. Then add the spinach and cook for another two minutes, stirring continuously.
  • Remove the skillet from the stove and stir in the feta cheese along with any desired seasonings. Transfer this mixture to a medium bowl and blend it with a hand blender or food processor. Allow this to set while you work.
  • Prep an 8X8" baking dish for nonstick and preheat your oven to 400.
  • To make the sauce, place the tomato sauce, the remaining garlic and additional seasonings as desired in a clean blender and process until blended. Then transfer the sauce to the prepped baking dish, spreading the sauce evenly in the dish .
  • On a cutting board or clean working surface, you can assemble the ravioli. To do so extend three slices of zucchini, one over the other, making a kind of cross or asterisk shape with space in the center to hold the interior ingredients
  • Use a tablespoon to add a dollop of the cheese and spinach mixture to the center of each of the crossed zucchini strips. Fold up the strips, one at a time, until the ravioli is closed and transfer the raviolis the the baking dish with the tomato sauce.
  • Top this with any optional additional cheese. Bake for 15-20 minutes or the cheese begins to turn golden the zucchini raviolis appear to be are softened.
