Vegan Oatmeal and Apple Cookies

Ingredients

  • Flax Egg-One see post for details
  • Oat Flour– ½ cup.
  • Rolled Oats– 1 cup.
  • All Purpose Flour– ¾ cup.
  • Cinnamon– 1 teaspoon.
  • Nutmeg– ¼ teaspoon.
  • Coconut Oil– â…“ cup melted.
  • Brown Sugar– ¾ cup.
  • Vanilla Extract– 1 teaspoon.
  • Apples- 1 cup peeled cored, and diced.

Instructions

  • Preheat your oven to 350 and prep a baking sheet for nonstick. I like to use parchment paper.
  • Next, prepare the flaxseed egg by mixing together the flaxseed with the water. Set this aside.
  • In a medium mixing bowl, use a fork or a whisk to mix together the oat flour, oats, all purpose flour, cinnamon and nutmeg.
  • Next, in a mixing bowl, beat together the coconut oil and the brown sugar until creamy. Then add the dry ingredients along with the vanilla extract and combine until just blended. Fold in the diced apples.
  • Use two spoons to spoon the dough into 12-14 cookies, leaving two inches in between. The dough will be sticky due to the flaxseed but easy to work with.
  • Bake the cookies for 12 to 15 minutes or until they turn golden brown around the edges.
    Then allow the cookies to cool on the baking sheet before transferring them.
