In a medium bowl, combine together the almond milk and the flaxseed meal. Set this aside while you work.
Next, in another bowl, use a fork to mix together the rolled oats, pecans, baking powder and the cinnamon.
Cream together the vegan butter with the brown sugar. Then add the dry ingredients from the last step (oatmeal etc.) to the bowl and gently stir. Add the almond milk and flaxseed mixture, the apple sauce, and vanilla extract and mix until just blended.
Fold in the chopped apples and then you can transfer the mixture to the prepped baking dish.
Bake for 35 to 40 minutes or until oats are well set and golden brown around the edges. Then allow this to it cool a bit before serving.
