Ingredients

  • Bananas- 2 average size mashed.
  • Whole Wheat Flour– 2 cups.
  • Granola– 1 ¼ cup
  • Baking Powder– 1 teaspoon.
  • Ground Cinnamon– 1 teaspoon.
  • Brown Sugar– ½ cup see above for alternatives.
  • Canola oil– ½ cup.
  • Eggs- 2 Almond Milk- â…“ cup.

Instructions

  • Mash the bananas if not already mashed.
  • Preheat your oven to 350 and prep your muffin pan for nonstick.
  • In a medium mixing bowl, use a fork or a whisk to mix together the flour, granola, baking powder and cinnamon.
  • Next, in a mixing bowl, beat together the brown sugar and oil. Then add the bananas and beat until just mixed.
  • Add the dry ingredients from the first bowl to the mixing bowl along with the eggs and milk and mix until just blended. Do not overmix.
  • Fill the muffin cup three quarters of the way full and bake for 20-22 minutes or until a toothpick comes out clean.
  • Allow the muffins to cool in the pan for five minutes before transferring to a wire rack to cool.
