Mediterranean Diet Vegan Matcha Cookies
Mediterranean Diet Vegan Matcha Cookies, a simple and healthier gluten free cookie recipe with just six ingredients.
Servings: 18 cookies
- Almond Flour– 2 cups blanched.
- Matcha powder– 2 teaspoons.
- Baking Soda– ½ teaspoon.
- Baking Powder– 1 teaspoon.
- Maple Syrup– 2 tablespoons.
- Vegetable Oil– ¼ cup.
- Optional- vegan dark chocolate chips– ¼ to ½ cup.
Preheat your oven to 350 and prep your baking sheets with parchment paper.
In a mixing bowl, use a whisk or a fork to mix together the almond flour, matcha powder, baking soda, and baking powder. Then stir in the maple syrup and vegetable oil. Do not over-mix, mix until just blended. Then fold in the chocolate chips with a spatula.
Use a scoop or spoon to scoop out each cookie, roll the cookie dough into a ball, and then flatten it on to the cookie sheet. Top with additional chocolate chips or course salt as desired. Bake for 12 minutes and remove the cookies from the oven. Allow your cookies to cool on the baking sheet where they will harden.
