Roast your pepper if not yet roasted and allow it to cool before using in this recipe. Also, drain and rinse the chickpeas.
Combine the ingredients in a good blender or food processor.
Process until smooth.
Add additional seasonings and sauce as desired.
Transfer to a container, cover the container and refrigerate for 2 ½ to 3 hours before serving to allow for the flavors to blend together. Top will drizzled olive oil and any desired seasonings or toppings and then serve.
