  • In a large saucepan over medium heat, heat up the olive oil for two minutes. Then stir in the onions, garlic, and carrots. Cook this until the carrot is soft and the onion is translucent. Stir in the tomatoes, tomato paste and three cups of the vegetable stock. Bring the soup to a boil and then turn down the heat to simmer. Simmer for 30 minutes, stopping to stir as needed. You can add additional vegetable stock (or water) as needed after removing the soup from the heat.

  • Once the soup has cooled to room temperature, you can use and immersion blender or transfer the soup to a regular blender (possibly in batches). Add any desired seasonings at this point. Blend until you reach your desired consistency. You can serve this as is, warm it up, or transfer the soup to a slow cooker.
