Ingredients

  • 4 Chicken Thighs
  • 2 tbsp Olive Oil
  • ½ cup Carrots
  • 1 lb Potatoes
  • 2 cups Broccoli
  • ¾ cup Green Beans
  • 1 Bell Pepper

    Instructions

    • Preheat the oven to 400° F and prep a rimmed baking sheet for nonstick. Pat the chicken with a paper towel to remove excess moisture. Sprinkle the chicken with any desired seasonings. Then use a pastry brush to brush the tops with 1 tablespoon of olive oil. Set the chicken skin side up on the prepped baking sheet. Cover the chicken with aluminum foil and bake for 20 minutes.

    • While the chicken is baking, in a large bowl, combine the carrots, potatoes, broccoli, beans, and the green pepper. Add the remaining olive oil and any seasonings to the bowl and toss the vegetables until they are all covered. After the chicken has baked for 20 minutes you can remove the baking sheet from the oven. Transfer the chicken onto a plate and then drain and discard the juices from the pan. Next, place the vegetables and then the chicken back into the pan in an even layer. Reduce the heat to 375° F. Return the sheet pan to the oven and bake for 35 to 45 minutes, or until internal temperature of the chicken reaches 165° F.

    • Transfer the chicken onto a plate and then drain and discard the juices from the pan. Next, place the vegetables and then the chicken back into the pan in an even layer. Reduce the heat to 375° F. Return the sheet pan to the oven and bake for 35 to 45 minutes, or until internal temperature of the chicken reaches 165° F.
