Marinated Portobello Mushroom Burgers

Ingredients

  • 4 Portobello Mushrooms
  • 4 Hamburger Buns
  • 2 Onions
  • 1 Tomato
  • 2 tbsp Olive Oil

Vegan Pesto Mayonnaise - see post for directions and ingredients.

    For the marinade: Balsamic Vinegar, Soy Sauce, Worcestershire sauce, live Oil- ½ tablespoon. Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper. - see recipe post for details

      Instructions

      • Whisk together the marinade ingredients listed. Pour half of the marinade in a shallow baking dish. Place the mushrooms cap sized down in the dish and then cover with the remaining marinade.
        Allow the mushrooms to soak up the marinade for about 30 minutes.
      • In a large skillet on medium heat, warm the two tablespoons of olive oil for a minute. Then add the sliced onions and cook the onions until brown, stirring occasionally to evenly brown them.
      • Preheat the grill to a medium high heat. You can prep the grates with oil. Grill the mushrooms for six to eight minutes on each side or until tender, brushing with marinade as needed to keep them moist.
      • To assemble the burgers, spread the pesto mayonnaise on the bun. Place a mushroom on top of the bottom bun and then top with a sliced tomato and other ingredients as desired before adding the top bun.
