Vegan Sweet and Sour Tofu

Ingredients

  • 3 tbsp Oil -divided
  • 2 Garlic
  • 1 Onion
  • 1 lb Tofu extra firm.
  • 1 Red Bell Pepper
  • 1 Green Pepper
  • 1 Yellow Pepper
  • ½ cup Pineapple
  • 1 Green Onion

    Instructions

    • Prepare the sauce as indicated .. Do not add the cornstarch and water however, as these will be added to the sauce later on. Place the tofu on a clean kitchen towel or paper towels to drain will you work (about 15 minutes). The tofu should be diced into 1″ cubes before adding it to this recipe.
    • Heat a large skillet on medium heat with two tablespoons of the oil. Add the garlic and sauté for two minutes or until fragrant. Add the chopped red onion and continue to sauté. When the onion is soft (about two minutes) you can turn off the heat. You can transfer this to a large bowl.
    • In another skillet, we will cook the tofu until brown. Heat the remaining oil on medium heat and add the tofu. Stir the tofu as needed until the tofu is golden brown. You can transfer the browned tofu to the bowl with the other cooked ingredients.
    • Lastly, we will make the sauce. In a small pot or saucepan, combined all of the sauce ingredients except for the cornstarch and water. Heat the ingredients on medium heat and use a whisk or spoon to stir this as it heats. When the ingredients begin to bubble you can whisk in the remaining ingredients. When the sauce has thickened you can remove it from the heat and toss it with the ingredients in the bowl. Serve this over rice or as desired
