Vegan Lemon Bars with Shortbread Crust,

Ingredients

  • ¾ cup Lemon Juice
  • 1 ½ cups Erythritol
  • 1 ¼ cups Coconut Milk
  • 6 tbsp Cornstarch

Turmeric– as needed for color. Optional- Vanilla extract for flavor, ½ to one teaspoon. Powdered sugar or sugar free sugar for topping.

      Instructions

      • Prepare the crust as indicated and allow it to cool while you make the topping.
      • Preheat the oven to 350. In a medium saucepan over medium heat, combine the lemon juice, coconut milk, cornstarch, and sweetener.
        Heat this until thickened, whisking continually, until thickened and the sweetener has fully dissolved.
        You can stir in any extract flavoring and turmeric as needed for color.
      • Transfer the filling to the prepared crust, evenly spreading it over the crust.
        Bake for thirty minutes or until the center is set. Remove the lemon bars from the oven and allow it to set at room temperature for a half hour. Then transfer it to the refrigerator overnight before cutting into bars and serving.
