Baked Chicken Nuggets from Scratch

Ingredients

  • 1 lb Chicken . -Use ground chicken
  • tbsp Greek Seasoning. -Divided
  • 2 Eggs -Lightly beaten.
  • ½ cup Panko Style Bread Crumbs. -Whole grain bread crumbs are more friendly to the Mediterranean diet. Also crush the crumbs.

Instructions

  • Prepare. Preheat your oven to 400f. Prep a rimmed baking sheet for nonstick. Parchment paper or a baking mat can work for this recipe.
  • Dredge Station. To make your dredging station you will need three bowls. In the first bowl place your bread crumbs along with a half tablespoon of the seasoning and use a fork to blend them together. The second bowl should contain your beaten eggs. For the last bowl, combine together the ground chicken and the remaining seasoning.
  • Scoop. Using a small scoop, scoop out ground chicken and roll it between your hands to form a ball.
  • Dredge. Dip the first ground chicken ball into the bowl with the egg and then roll the ball around in the bowl with the panko nuggets until covered. Place the coated chicken ball on to your prepared baking sheet and then press the ball down to about a half inch thick. Continue the process with the remaining ground chicken.
  • Bake. Bake the chicken nuggets for 20-25 minutes or until the turn golden brown, flipping them over halfway through (about 10 minutes).
