Start by preparing the cucumbers. Slice the cucumbers in half lengthways and then use a spoon to carefully scrape out the seeds. Then slice the cucumber halves into thin slices.
Placed the slices of cucumber into a colander (over the sink) and toss with the salt. Then allow the colander to sit for about 30 minutes to drain. Rinse the cucumber slices and then blot them dry using a clean kitchen towel or paper towels.
Placed the drained cucumbers in a large serving bowl and then toss in the sliced onion and mint.
To make the dressing, simply whisk together the ingredients. Then toss the ingredients in the dressing.
Refrigerate the salad for 20-30 minutes for the ingredients to set together and then serve.
