Equipment

Ingredients

  • cups Tortilla Chips - plus additional as desired.
  • 2 cups Black Beans, - cooked, rinsed, drained. Such as canned.
  • 1 cup Corn - cooked, such as drained canned or defrosted frozen.
  • ½ cup Onion -diced
  • 3 cups Cheese - shredded or grated, such as cheddar, Monterey Jack, or a blend.

Optional ingredients include: sliced jalapeno peppers, sliced peppers,tomatoes, sliced olives, sour cream, guacamole, and/or salsa.

Instructions

  • Start by laying out the sheets of foil that will hold the nachos. You can give the foil a quick spray of nonstick.
  • Sprinkle about a half tablespoon of shredded cheese in the center of each of the foil sheets. Then place a handful of the tortilla chips on top of the cheese. The chips should be in mound and about an inch away from the edges of the foil.
  • Top the chips first with the remaining cheese as this will help to keep the chips sturdy when cooking.
  • Over the cheese evenly place your remaining ingredients. If you have the space, you can top these ingredients with a small amount of additional cheese.
  • To close the foil to make the packet, bring up the corners of the foil so that the two corners on the left side of the foil meet and the two corners on the right side meet.
    Pinch the corners together and then seal the sides of the foil to make the packet.
  • To make this on a grill, first preheat your grill to 350 degrees or a medium heat. Place the foil packets on the grill with the opening on the packets facing up. Grill the packets for 10-12 minutes or until the ingredients are warm and the cheese appears to be melted.
  • To make this on a campfire, use a grill, grate, or cast iron pan rather than placing the packets directly on the fire. Cook the packets for 8-10 minutes or until the ingredients are warm and the cheese appears to be melted.
  • To make this recipe in an oven, simply bake the packets at 350 for 15-18 minutes (depending on your oven, times may vary).
  • Carefully open the packets on a plate or something flat and enjoy .
