Equipment

Ingredients

  • 15 oz Chickpeas. --cooked, rinsed, and drained
  • cups Tomatoes -sliced or quartered.
  • ¼ cup Shallots -Minced or diced
  • 3 tbsp Red Wine Vinegar
  • 5 tbsp Olive Oil.
  • ½ cup Parsley -Chopped into small pieces.
  • ½ cup Cilantro. -Chopped into small pieces.
  • 1 tsp Red Pepper Flakes
  • Seasonings to taste as desired.

Instructions

  • Prepare. Prep your ingredients as indicated.
  • Combine. Place your chickpeas, shallot pieces, sliced tomatoes and herbs in a large bowl. In a smaller bowl or measuring cup with a spout, use a whisk to combine together the vinegar, olive oil, red pepper flakes, and seasonings.
  • Toss. Pour half of the wet ingredients from the last step over the ingredients in the large bowl and use two large spoons or similar items to toss the ingredients. Then repeat this step with the remaining wet ingredients, tossing so that the ingredients are well incorporated.
  • Chill. Cover the bowl and refrigerate for at least 30 minutes for the flavors to meld together.
  • Serve. Serve your marinated chickpeas on toast, over rice or polenta, or as desired.
