Ingredients

  • 2 Chicken Breasts -sliced in half lengthways.
  • 2 tbsp Flour
  • Salt -as desired, another seasoning can be used.
  • Pepper -as desired
  • 2 tbsp Olive Oil
  • 3 tsp Garlic - finely chopped or minced.
  • 1 cup Greek Yogurt
  • ½ cup Chicken Stock.
  • 2 tbsp Dijon Mustard.
  • 1 tbsp Honey

Instructions

  • If you have not done so, prepare your chicken as indicated and then place the chicken into a large zip top bag.
  • In a small bowl, use a fork or a whisk to combine together the flour and seasonings. Then add these dry ingredients to the bag with the chicken.
  • Seal the bag and then shake or rotate the bag so that the chicken becomes coated with the dry ingredients.
  • In a large skillet, heat your olive oil on medium high heat for one minute.
  • Add the chicken to the skillet and cook until the turn golden brown on each side (about four minutes per side).
  • Remove the chicken from the skillet.
  • Next, add the garlic to the skillet and cook until fragrant (about a minute). Then add the yogurt to the skillet along with the stock, mustard, and honey.
  • Use a wooden spoon to stir the ingredients and gently scrape the chicken residue from the bottom as you cook the sauce.
  • When your sauce begins to bubble you can place the chicken back into the skillet.
  • Cover the skillet and cook for another five minutes or until the chicken is cooked through.
