Use a whisk to combine together your oats, fruit, and cinnamon in a large mixing bowl.
In a medium sized saucepan on medium high heat, combined together the peanut butter and maple syrup. Stir or whisk the heating ingredients until they are combined, smooth, and have darkened (about six to seven minutes).
Remove the saucepan from the heat and carefully pour the warm ingredients over the ingredients that you placed into your large mixing bowl (oats etc.)
Use a rubber spatula or similar item to stir or fold the ingredients until the oats are well covered with the warmed ingredients. Then fold in your chocolate chips and any optional add-ins such as chopped nuts.
Transfer the ingredients to your prepared baking pan and evenly press the mixture into place. You can then press in additional chocolate chips if desired (some of your previously added chips may have somewhat melted.).
Refrigerate your bars until set (about an hour). Then use the parchment paper to lift the bars out of the pan to slice into servings.
