Portobello Mushroom Fajitas

Equipment

Ingredients

  • 1 lb Portobello Mushrooms. - cleaned and sliced.
  • 1 Red Bell Pepper - sliced
  • 1 Yellow Bell Pepper - sliced
  • 1 Green Bell Pepper - sliced
  • cups Onion -sliced into strips.
  • 2 tbsp Olive Oil.

Fajita Seasoning

Tortillas and lime juice for serving.

Instructions

  • Start by preparing your ingredients as indicated. Slice your mushrooms, peppers, and onion and whisk together the fajita seasoning in a small bowl.
  • Heat your olive oil in a large skillet on medium heat for one minute. Then add the peppers and onions and cook for four to five minutes or until the peppers have softened and the onion is translucent (stirring occasionally for the ingredients to evenly cook).
  • Add the sliced mushrooms to your skillet and use heat-proof spatula or similar item to fold them into the other ingredients. Cook the ingredients until the mushrooms are soft with some browning (about five to seven minutes).
  • Add half of your seasoning to the skillet and stir the ingredients. Then repeat this step with the remaining seasoning so that all of the ingredients are covered with your seasonings.
  • Cook for another minute and then remove the fajitas from the heat.
