Brussels Sprouts- 4 cups.
Apple- 1 diced
Chopped Walnuts- ½ cup.
Parmesan Cheese- as desiredshredded.
Bacon- 2 slices cooked and chopped. Use something that is friendly to the Mediterranean diet like a turkey or alternative bacon such as a vegan bacon.
Dressing- see above for the recipe.
Make the orange juice dressing as indicated above. Set this aside while you prepare the salad.
Prepare the Brussels sprouts as indicated above. Place the shaved or sliced sprouts in a large bowl.
Add the diced apples, chopped walnuts, shredded parmesan cheese, and bacon to the bowl. Give the ingredients a quick toss.
Next, drizzle a bit of dressing over the salad and toss. Add additional dressing as needed as well as seasonings.
Toss and serve.
