You may be wondering how do you shave Brussels sprouts.
Some people will use a strong blender or food processor to shave their sprouts.
However, I find that is is simple to just use a kitchen knife and cut them by hand.
Here is how to prepare the brussels sprouts for this recipe.
I first like to trim off the ends and outer layers and then rinse my sprouts in cold water then allowing them to dry. To shred the sprouts simple cut them lengthwise in half then slice the halves to create shreds.
You may be asking can you eat raw brussels sprouts in a salad.
The answer is yes, you can eat raw brussels sprouts in a salad.
This tasty recipe is certainly proof of that.
However, in order to eat the brussels sprouts in a salad, I suggest making it easier it eat.
In this salad we will 'shred' the brussels sprouts to make them easier to eat.
Shredding will also make the brussels sprouts blend in with the other ingredients as well.

This recipe can be made with bacon. However, since we are looking for something a bit more friendly to the Mediterranean diet, I suggest using a turkey or alternative bacon such as a vegan bacon.
Here are some more great tips for you.
- I like to add dried fruit to add color, texture, and flavor to this salad. Raisins, dried cranberries, or a mix of dried berries are my go-to choices.
- I am providing you with a dressing made with orange juice as this is a nice balance of flavors. Feel free to use the dressing of your choice or to sub in another citrus juice for the orange juice.
- Since brussels sprouts are small, you will not have to make more than a few slices to each half to create the shreds. I suggest using your hands to pull apart the cut pieces to separate the shreds created.
How to make orange juice salad dressing without vinegar.
Instead of vinegar, we are using orange juice as our acid in this recipe.
The orange juice offers a nice flavor balance to the other ingredients that we are adding to this salad.
To make the dressing simply whisk or blend together the following ingredients:
- Orange Juice- ¼ cup.
- Olive Oil- ¼ cup.
- Dijon Mustard- 1 teaspoon.
- White Pepper- ½ teaspoon.
This brussels sprout salad with apples walnuts and parmesan can be made in advance.
I suggest that if you do make this in advance, to not assemble the ingredients until about an hour before you are ready to serve it. Allowing the ingredients to sit for 20 minutes to up to an hour can make this salad taste even better!

I mentioned above that I rinse and trim the brussels sprouts before shredding them for this recipe. To shred brussels sprouts, simply cut the sprouts in half and then slice the halves to create the shreds, using your hands as needed to separate the shreds.
Another option is to use a mandolin slicer.
You may even be able to find shredded Brussels sprouts in a bag at your local grocery store.

Ingredients needed to make shaved brussels sprout salad with apples and walnuts.
- Brussels Sprouts- 4 cups. That is about a pound of sprouts.
- Apple- 1 diced fine. I like Jonathon Gold, Fuji, or even Gala for this recipe. You use the apple of your choice.
- Chopped Walnuts- ½ cup.
- Parmesan Cheese- as desired, shredded.
- Bacon- 2 slices cooked and chopped. I mentioned above that you should use something that is friendly to the Mediterranean diet like a turkey or alternative bacon such as a vegan bacon. Another option is to use baked chicken or similar. You can also omit this ingredient.
- Dressing- see above for the recipe.
How to make Brussel sprout salad with bacon and apples
- Make the orange juice dressing as indicated above. Set this aside while you prepare the salad.
- Prepare the Brussels sprouts as indicated above. Place the shaved or sliced sprouts in a large bowl.
- Add the diced apples, chopped walnuts, shredded parmesan cheese, and bacon to the bowl. Give the ingredients a quick toss.
- Next, drizzle a bit of dressing over the salad and toss. Add additional dressing as needed as well as seasonings.
- Toss and serve.
