Prep a square baking pan with parchment paper that overhangs the sides of the pan. Set this aside while you work.
Prepare your sweet potato puree if has not been prepared yet. Place the sweet potato puree in a large mixing bowl
In a microwave safe bowl, melt the chocolate, stopping every 30 seconds to stir. Once melted and cooled, transfer the melted chocolate to the mixing bowl with the puree and give it a quick stir. The add the remaining ingredients and blend until combined.
Evenly distribute the blended ingredients in the prepared baking pan. Then place the fudge into the refrigerator until set (about an hour or so).
Top the fudge with any desired topping. Use the overhanging parchment paper to remove the fudge from the pan and cut into pieces to serve.
