Regular fudge often has dairy ingredients in it.
Those ingredients may include butter and some kind of milk.
Vegan fudge obviously does not contain butter or milk in it.
Instead of the butter, this recipe has the sweet potato puree.
And, instead of the milk, we are using a vegan milk alternative.
This recipe is for anyone asking what can be made with sweet potatoes.
If you have leftover cooked sweet potatoes, this is certainly a great way to use them up.
If your sweet potatoes have not been cooked, I will give you instructions on how to prepare them.
Sweet potatoes add structure and flavor to this recipe.
The potatoes also add a sweetness to this recipe.
Because we are using chocolate, you will most likely not see any orange coloring from the potatoes in your fudge.

Tips for making vegan fudge.
This recipe calls for using coconut cream. Please do not substitute coconut milk for the cream as the cream is an important source for the fat that is needed for a good fudge.
Here are some more great tips for you.
- Instead of sugar we are using maple syrup in this recipe. A possible substitute for the syrup is honey however, you should test the fudge as you go as less maple syrup is needed to get a similar sweetness of honey.
- To make this recipe you will need sweet potato puree. The easiest way to get a sweet potato puree is to simply buy sweet potato puree in a can.
- I suggest that you use a darker chocolate in this recipe for both flavor and color. If you are using a 75% cacao chocolate bar or beyond, you may need to adjust the maple syrupto taste as it may need extra for sugary palates.
How to make this a sugar free or low sugar vegan fudge.
Obviously, sweet potatoes are not without sugar (albeit, natural sugar).
However, you can make this vegan fudge lower in sugar.
Try these substitutions.
For the sweet potatoes, sub in pumpkin puree and for the coconut cream, use an unsweetened coconut cream.
Use a liquid sugar alternative that measures like maple syrup or a sugar free version of maple syrup to sweeten this fudge (adjustments may need to be made).
How to store vegan fudge.
I like to wrap these in individual servings in a zip top bag or plastic wrap.
For best results, store the fudge in an air-tight container refrigerated and it can keep for up to seven days.

How to puree sweet potatoes.
I mentioned above that the easiest way to get a sweet potato puree is to simply buy sweet potato puree in a can.
However, you can also do it yourself.
Pierce each potato a few times with a fork and then place the potato on to a baking sheet.
Bake the potatoes at 375 for 90 minutes or until soft then allow them to cool before peeling.
Once cooled and peeled, simply puree the potatoes in a food processor or strong blender.

Ingredients needed to make Sweet Potato Chocolate Fudge
- Sweet Potato Puree- 1 cup at room temperature.
- Dark Chocolate- 2 cups of chips or 16 ounces.
- Salt- ¼ teaspoon.
- Maple Syrup- ¼ cup.
- Coconut Cream- ¼ cup.
- Vanilla Extract- ½ teaspoon.
- Ground Cinnamon- ½ teaspoon.
- Optional- Peanut Butter (¼ cup for flavor)and/or shredded coconut for topping.
How to make Vegan Sweet Potato Fudge
- Prep a square baking pan with parchment paper that overhangs the sides of the pan. Set this aside while you work.
- Prepare your sweet potato puree if has not been prepared yet. Place the sweet potato puree in a large mixing bowl
- In a microwave safe bowl, melt the chocolate, stopping every 30 seconds to stir. Once melted and cooled, transfer the melted chocolate to the mixing bowl with the puree and give it a quick stir. The add the remaining ingredients and blend until combined.
- Evenly distribute the blended ingredients in the prepared baking pan. Then place the fudge into the refrigerator until set (about an hour or so).
- Top the fudge with any desired topping. Use the overhanging parchment paper to remove the fudge from the pan and cut into pieces to serve.
