I have had people ask me if Vegans can eat fudge.
The answer is yes, vegans can eat fudge as long as there are no animal products used to make it.
In the case of fudge, that means the recipe needs to be diary-free.
That could make you wonder what fudge is made out of.
This fudge is made out of pretty much some of the same ingredients that you would see in many fudge recipes.
However, this recipe has been tweaked to be a more healthy, or less unhealthy, fudge recipe.
People like to know if chocolate is allowed on the Mediterranean diet.
Chocolate, or cocoa as it is in this recipe, is indeed allowed. That is, in moderation and preferably not sweetened with sugar.
This recipe calls for cocoa powder as the source of chocolate.
Dutch process cocoa works great in this recipe because it provides a more mild taste and works great in recipes such as this one. You are welcome to use unsweetened cocoa powder if you prefer to.

- This recipe calls for peanut butter. Feel free to use a sugar free or organic peanut butter instead.Another option would be to use almond butter.
- How long can you keep fudge? What really goes bad about fudge is the structure. However, if you store your fudge in an airtight container or wrapped well and airtight, then it should keep in a presentable form for a few weeks.
- Lining the pan with Parchment Paper that overhangs the pan is a great idea in this recipe. I say this because not only does the parchment paper make for an easier clean up, the overlapping of the paper over the pan helps make it easier to transfer the cooled and hardened fudge for cutting.

- Use a food processor or Vitamix blender to mash together the avocado and peanyt butter. Then stir in the syrup.
- Microwave Method- in a microwave- safe mixing bowl, melt the chocolate chips. Tip: spray the bowl with nonstick before adding the other ingredients to make for an easier clean up. Microwave on high, stopping every 15 seconds to stir, until the chips have melted.
- Stove Method- Over medium heat, melt the chocolate chips. A double boiler is not essential for this. However, you should stir the ingredients throughout the melting process. Tip: as with the microwave method, spraying your pan with nonstick before adding the other ingredients can help your clean up process. Allow this to cool slightly while you move on to the next step.
- Moving back to the mashed avocado with other ingredinets, blend in the powdered cocoa and the vanilla. Then slowly add the melted chocolate.
- Use a rubber spatula to transfer the ingredients to the prepared aluminum pan.
- Refrigerate for an hour and a half or until the fudge is set.
- To cut the fudge into servings, simply lift it out of the pan using the overhanging parchment paper to transfer it.
