Herbs and seasonings as desired. My salad has chopped basil and mint.
Instructions
Place the arugula on the bottom of a large salad serving bowl. Spread the lettuce out evenly so that it covers the entire bottom and some of the sides of the bowl.
Next, place the prepared ingredients (cantaloupe, strawberries, cucumber, and radishes) on top of the arugula. Add the olive oil to the bowl and toss the ingredients.
Sprinkle the quinoa over the salad. Then add any optional herbs and seasonings.
Refrigerate the salad for ten minutes to allow the ingredients to blend and then serve.
