Ingredients
½cupDates
1cupAlmonds
½cupShredded Coconut
4tbspLime Juice
2tspStevia
2tspVanilla
3tbspCoconut Oil
2cupsCashews
Instructions
To make the crust layer, pulse your almonds in a blender or food processor to ground them. Then add the dates and the shredded coconut. Continue to pulse until you get a grainy but, sticky mixture. Press the mixture into a prepared square pan.
To make the filling combine together the softened cashews, lime juice, stevia, vanilla extract, coconut oil, and canned coconut milk in a food processor or blender and pulse until completely smooth.
Evenly spread the filling over the base that is in the pan. Refrigerate until set (about three hours) before serving.
