Sweet Potato Soup with Miso

Ingredients

Instructions

  • Heat the oil in your pot on medium heat for two minutes.
  • Add the prepared celery, onion, carrots, and garlic to the pot and cook the ingredients, stirring occasionally as needed, until the onion turns translucent .
  • Stir in the diced sweet potatoes and top the ingredients with the ground ginger, cooking for about a minute .
  • Next, add the broth along with the water. Stir the ingredients and then turn down the heat to medium low and cover and cook the ingredients until the vegetables are soft .
  • Once the vegetables have softened you can stir in the miso past and seasonings. Remove the soup from the heat and carefully use an immersion blender on pulse setting to blend the ingredients together.
