Equipment

Ingredients

  • 1 cup Onion. --Diced
  • 2 cups Carrots. --chopped
  • ½ cup Pecans.
  • 3 tsp Garlic --minced
  • 1 tbsp Olive Oil.
  • 2 tbsp Chipotle Sauce
  • cup Tomato Sauce
  • 2 cups Brown Rice. --precooked and cooled.
  • 1 cup Oats. --Rolled

Instructions

  • Prepare. Gather and prepare your ingredients as indicated. Also, prep a loaf pan well for nonstick. Lastly, preheat your oven to 350.
  • Sauté. In a large skillet on medium heat, warm your oil for one minute. Then add the chopped carrots and onions along with the minced garlic and sauté until soft and the onion is translucent. Remove the skillet from the heat and allow the ingredients cool for a minute or so.
  • Process. Place the chipotle sauce, tomato sauce, pecan nuts, dried italian herbs into your food processor and give the ingredients a quick pulse. Then add the ingredients from the skillet to the processor and process until combined.
  • Rice and Oats. Add your cooked rice to your food processor and give the ingredients a few pulses. Then add the rolled oats and process until the ingredients are combined.
  • Bake. Transfer your processed ingredients to your prepared loaf pan and the bake for 25-30 minutes or until the top of the meatloaf is golden brown.
  • Serve. Let the meatloaf sit in the loaf pan for a few minutes before inverting it over a plate or cutting board to slice. You can brush tomato or barbecue sauce over the meatloaf before serving.
