- 1 tbsp Olive Oil
- 2 cups Arborio Rice
- 1 cup Pumpkin Puree
- 2 cups Mushrooms - sliced or chopped as needed
- ½ cup Vegan Parmesan Chees
Seasonings as desired. This can include nutmeg, salt, pepper, and parsley.
