This recipe for Peanut Butter and Honey Fudge is one of the easiest recipes for fudge that I have ever seen.
I like that this is also one of the healthiest (or least unhealthy anyway) fudge recipes that are there as well.

This fudge recipe demonstrates that you do not have to add a lot of sugar, as well as questionable ingredients, to the bowl in order to make a decent fudge. I must also add that this recipe is friendlier to the Mediterranean diet than other fudge recipes as well.

There really is more than one way to describe how fudge is made.
Most of us can agree that fudge is usually made by using a lot of sugar. That sugar can come from various sources including sugar itself.
The main ingredients in this fudge do not include processed ingredients or added granulated sugars.
Instead, we will use honey, instead of sugar, as a natural sweetener. By the way, maple syrup can be used instead of the honey however, you will need less syrup than you would honey.
Also important to the recipe is what is in peanut butter.
I am suggesting a smooth peanut butter for this recipe. However, keep in mind that regular peanut butter usually comes with added sugar in it.
There are options for the peanut butter in this recipe.
I like the idea of using a sugar free or organic peanut butter to make this fudge. Even better, here is how to make your own peanut butter (super easy!).
Tips for making Peanut Butter and Honey Fudge
I just mentioned that you can try using maple syrup instead of the honey in this recipe (although you will need less syrup than you would honey). Also, I mentioned that you can keep this recipe low in sugar or more organic with the peanut butter that you use.

- Sometimes fudge seems as if it just does not set fully. To get a great setting fudge it is important your fudge gets hot enough when you are heating it. Heating your fudge well will help prefent it from not setting.
- How long can you keep fudge? What really goes bad about fudge is the structure. However, if you store your fudge in an airtight container or wrapped well and airtight, then it should keep in a presentable form for a few weeks.
- Lining the pan with Parchment Paper that overhangs the pan is a great idea in this recipe. I say this because not only does the parchment paper make for an easier clean up, the overlapping of the paper over the pan helps make it easier to transfer the cooled and hardened fudge for cutting.
I should also mention that this recipe also include white chocolate chips.
The white chocolate chips are essential to the structure of this fudge. They not only add a flavor, the white chocolate chips also help the fudge set.
The good news is that there are new varieties of white chocolate chips.

The pan that you use to bake your fudge is also important.
I like to use a square aluminum pan for fudge. Then, as I mentioned earlier, I line it with parchment paper.

- Microwave Method- in a microwave- safe mixing bowl, stir together the peanut butter with the white chocolate chips. Tip: spray the bowl with nonstick before adding the other ingredients to make for an easier clean up. Microwave on high, stopping every 30 seconds to stir, until the peanut butter and the chips have melted together.
- Stove Method- Over medium heat, melt together the peanut butter with the white chocolate chips. A double boiler is not essential for this. However, you should stir the ingredients throughout the melting process. Tip: as with the microwave method, spraying your pan with nonstick before adding the other ingredients can help your clean up process.
- Both methods, one the ingredients have melted together, stir in the honey and the vanilla extract. Once blended, you can transfer the fudge to your refrigerator to set.
- To cut the fudge into servings, simply lift it out of the pan using the overhanging parchment paper to transfer it.
