Ingredients

  • Traditional Couscous – 2 cups.
  • Water- 2 cups.
  • Salt- dash.
  • Red Bell Pepper- ½ cup chopped.
  • Green Bell Pepper- ½ cup chopped.
  • Carrots- 1 cup shredded.
  • Corn- 1 cup.
  • Red Onion- ⅓ cup chopped.
  • Olive Oil– 1 tablespoons.
  • Seasonings- 1-2 teaspoons. T
  • Optional: Serve with lemon wedges for each individual serving.

Instructions

  • To make the couscous. Bring the water to a boil. Once the water is boiling you can stir in the couscous and salt. Stir the couscous well and then cover pot and remove it from from the heat. Let the couscous sit for about 5 minutes, then fluff with a fork. (Skip this step if you are using premade couscous).
  • In a large bowl, combine cooked couscous with all remaining ingredients. Toss well so that the olive oil and seasoning coat everything. Add additional ingredients as needed for taste.
  • Serve with lemon wedges, if desired. You can serve this recipe warm or cold.

Recipe Notes

I mentioned that this salad can be made with freshly prepared couscous or leftover couscous.
However, my favorite hack to use with this salad is to use precooked all ready to go couscous rather than making some just for this recipe. Also mentioned, was that you can sub in cauliflower rice for a lower carb version of this recipe.
This recipe calls for olive oil.
However, you could easily sub in another flavorful oil such as avocado oil or even grapeseed oil.
