I could easily serve this for lunch or dinner and everyone would be happy eating it!

That salad recipe is for a popular Mediterranean diet salad recipe made with bulger.
This recipe is also a Mediterranean diet recipe however, it features couscous.

This recipe is for anyone asking what is couscous salad made of.

Obviously, a couscous salad is made with couscous as well as with other popular salad ingredients.
The salad ingredient in this recipe have been chosen to represent a rainbow theme.

I like that this couscous salad is rather simple to make.

Once you have the couscous ready (think leftovers?), all that you need to do is combine it with the other ingredients then toss and serve the salad. By the way, my favorite hack with this salad is to use precooked all ready to go couscous!

You may be wondering is couscous a pasta, a carb, or even a protein.

Let me start by saying that couscous is not a low carb ingredient. However, you could easily sub in cauliflower rice for a lower carb version of this recipe.

Couscous is made from whole wheat flour (semolina ).

Vegans like couscous because it does have protein and fiber in it.
As you probably already know, couscous is a staple in the Mediterranean region of the world and hence, the Mediterranean diet.

Tips for making couscous salad.

I mentioned above that perhaps my favorite hack to use with this salad is to use precooked all ready to go couscous rather than making some just for this recipe. Also mentioned, was that you can sub in cauliflower rice for a lower carb version of this recipe.

Here are some more great tips for you.

  1. While I do not recommend combining the ingredients together in advance you can still save time before serving it. Simply prepare your vegetables in advance. Then all that you will need to do is toss the ingredients with the couscous and serve!
  2. This recipe calls for olive oil. However, you could easily sub in another flavorful oil such as avocado oil or even grapeseed oil.
  3. Your cooked or leftover couscous may seem to be clumpy when you go to use them in this recipe. A simple way to break down the clumps is to use a fork to fluff up your couscous before adding it this salad.

So, you may be wondering what can I add to my couscous.

There are additional add-ins that you can add to a couscous salad such as this one.
While the focus of this salad is on a rainbow theme, feel free to add additional ingredients or sub in for ingredients.

Here are some ideas for ingredients that may work in this salad.

Cheese eaters could enjoy feta cheese or blue cheese sprinkled in .
However, you could stick to a Mediterranean diet theme and add sliced olives, fruit, or even chopped nuts.

How to store couscous salad.

Storing the individual ingredients and then tossing everything together before serving is optimal.
However, when it comes to leftovers, if you store them in an airtight container the leftovers should keep for up to five days.

I mentioned above that this salad can be made with freshly prepared couscous or leftover couscous.
However, my favorite hack to use with this salad is to use precooked all ready to go couscous rather than making some just for this recipe. Also mentioned, was that you can sub in cauliflower rice for a lower carb version of this recipe.

This recipe calls for olive oil.

However, you could easily sub in another flavorful oil such as avocado oil or even grapeseed oil.

Ingredients needed to make a Mediterranean Diet Couscous Salad

  • Traditional Couscous – 2 cups. (I have not tried this with Israeli couscous.)
  • Water- 2 cups. You can omit this if you are using prepared couscous.
  • Salt- dash.
  • Red Bell Pepper- ½ cup chopped.
  • Green Bell Pepper- ½ cup chopped.
  • Carrots- 1 cup shredded.
  • Corn- 1 cup.
  • Red Onion- ⅓ cup chopped.
  • Olive Oil– 1 tablespoons.
  • Seasonings- 1-2 teaspoons. This can include Italian Seasonings, Salt, and/or Pepper. I like Mediterranean Diet Seasoning Blend or a Greek Seasoning Blend.
  • Optional: Serve with lemon wedges for each individual serving.

How to Make Mediterranean Diet Rainbow Couscous Salad

  • To make the couscous. Bring the water to a boil. Once the water is boiling you can stir in the couscous and salt. Stir the couscous well and then cover pot and remove it from from the heat. Let the couscous sit for about 5 minutes, then fluff with a fork. (Skip this step if you are using premade couscous).
  • In a large bowl, combine cooked couscous with all remaining ingredients. Toss well so that the olive oil and seasoning coat everything. Add additional ingredients as needed for taste.
  • Serve with lemon wedges, if desired. You can serve this recipe warm or cold.
