Instructions

  • In a large mixing bowl, use a fork to mix together the flaxseed meal, chia seeds and warm weather.
    Add the remaining ingredients to the bowl and then allow it to sit until the water had been absorbed and the mixture has thickened to a gel-like consistency (15-20 minutes).
  • While the ingredients are thickening, you can preheat your oven to 325 and line a rimmed baking sheet with parchment paper that hangs a bit over the ends of the baking sheet.
  • Once the ingredients in the bowl have thickened you can transfer them to the prepared baking sheet.
    Use a spoon ,rubber spatula, and/or small rolling pin to evenly spread the mixture out as thin as possible.
  • Bake the crackers for 35-40 minutes or until they are golden brown.
    Let the crackers fully cool on the baking sheet and then use the parchment paper to life the crackers out of the pan.
  • Lastly, break the crackers into pieces before enjoying them.

For the carrot dip.

  • If you have not done so, cook the carrots until soft and tender.
  • In a food processor or good blender, combine the ingredients and puree or pulse until you get your desired consistency.
  • Refrigerate the dip for about an hour for the flavors to set. Serve at room temperature with your crackers.
