Ingredients

  • 4 cups Potatoes - see post for details.
  • 1 cup Tomatoes - see post for details.
  • 1 ½ cups Asparagus - cut and softened.
  • 3 Radishes
  • 2 cups Arugula

    Instructions

    • Roast the potatoes as indicated in the recipe post. Then allow your potatoes to cool.
      Prepare the asparagus by slicing in thirds, You can soften the asparagus to make it easier to eat. Directions in post or you can steam the asparagus
    • Slice the radishes thin.
    • Place the arugula in a large serving bowl. Evenly distribute the potatoes over the arugula and then add the tomatoes, asparagus, and radishes. Next, add the dressing that you have prepared and optional seasonings and toss.
