As you may already know, the Mediterranean diet is all about healthier food that is prepared in a healthier way. When it comes to potato salad, this is no exception.
This Mediterranean diet friendly potato salad differs from the usual potato salad.
While this salad does include potatoes, it also has other fresh vegetables added to it. It is also prepare in a lower fat way that includes not added mayonnaise.
You may be wondering how do you make potato salad taste better.
There are some people who believe that a potato salad tastes better when you use a good amount of mayonnaise to make it. They may also add a bit of celery for a crunchy effect.
However, this potato salad tastes delicious thanks to the ingredients that are added to it.
In addition to the potatoes, this salad also included roasted tomatoes and fresh asparagus. You can serve this salad on top of lettuce and top it off with the amazing olive oil and maple syrup dressing that I have also provided below.

Tips for making Mediterranean Potato salad.
My potato salad is served on top of arugula lettuce. Feel free to use a spring salad, which usually contains arugula, to make this easier and more tasteful for you.
Here are some more great tips for you.
- The potatoes should be cut into bite sized cubes before measuring. This is because Yukon potatoes tend to vary in size so it is hard to know the exact number needed.
- When you bake the potatoes, the outside of potato cubes should be soft. It is preferable that the inside of the cubes remain somewhat hard however.
- The cherry tomatoes in this recipe can be roasted for additional flavor. Feel free to skip the roasting step or use another similar tomato instead.
How to prepare the potatoes for Mediterranean diet potato salad.
For this recipe we are using Yukon Gold potatoes as they are the perfect texture for this recipe. The potatoes should be cut into bite-sized pieces with the skin removed.
How to bake the potato cubes.
- Preheat the oven to 425. Transfer the same sized/bite sized cubes to a large bowl and toss with two and a half tablespoons of olive oil and seasonings of choice.
- Place the tossed potatoes on a rimmed baking sheet and bake for 25-30 minutes or until brown (flip and stir as needed).
- Allow the potatoes to cool before making the salad.
How to store leftover summer potato salad.
This salad should be stored in an airtight container and in a refrigerator where it should keep for up to five days. It is best to hold off with the arugula and dressing until you actually serve ti.

How to make olive oil and maple syrup dressing.
The dressing can be drizzled on top of the salad before serving. Or, you can toss the ingredients in the dressing if desired.
To make the dressing, whisk together the following ingredients.
- Olive Oil- 2 tablespoons.
- Dijon Mustard- 1 tablespoon.
- Maple Syrup- 1 tablespoon.
- Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
Ingredients needed to make Mediterranean diet friendly potato salad.
- Baked Yukon Potato Cubes- 4 cups. See recipe for baking these potatoes above. The amount needed should be between eight and 12 potatoes. However, this is depending on the size as Yukon potatoes tend to very in size. You can cut the potatoes as directed, measure four cups, and then bake them if you are unsure.
- Cherry Tomatoes- 1 cup. You can roast these tomatoes for more flavor.
- Asparagus- 1 ½ cups. The asparagus should have the bottom cut off (¼") and then cut in thirds. You can soften the asparagus by roasting them with a bit of olive oil (in a pan on medium heat as needed).
- Radishes- 3, sliced thin.
- Arugula- 2 cups or as desired.
- Dressing- see above for recipe.
- Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

How to make this Mediterranean Diet Summer Potato Salad
- Roast the potatoes as indicated above. Then allow your potatoes to cool.
- Prepare the asparagus by slicing as indicated. You can however, soften the asparagus to make it easier to eat. Directions above or you can steam the asparagus.
- Slice your radishes.
- Place the arugula in a large serving bowl.
- Evenly distribute the potatoes over the arugula and then add the tomatoes, asparagus, and radishes.
- Next, add the dressing that you have prepared and optional seasonings and toss.
- Serve the potato salad as desired.
