I also mentioned simple ways to enhance this salad to your likings.
Adding raisins or dried cranberries is an easy way to give flavor, color and texture to this recipe. Another option that I like is adding chopped walnuts or chopped pecans for a nice flavor.
Ingredients needed to make this Sesame Carrot Salad
- Carrots- 8 average sized carrots. The carrots should be grated. That is about two and a half cups, depending on the size of your carrots. You may be able to find carrots all ready grated in the produce department of your local grocery store.
- Sesame Dressing- ¼ cup or as needed. See above for the recipe.
- Pistachios- ¼ cup chopped. Feel free to sub in another nut or omit the nuts.
- Coriander- ½ cup fresh and chopped. An alternative to this can be parsley (I like cilantro đŸ™‚ ).
How to make Asian Carrot Salad in Sesame Dressing.
- If you have not already done so, grate the carrots. Then transfer the carrots to a clean kitchen towel or small stack of paper towels to drain while you work. It should take only five to ten minutes to drain much of the water especially if you blot the carrots. You can even keep the water and not drain if you desire to.
- Prepare the dressing as described above. Set the dressing aside.
- In a large salad bowl, combine the grated carrots, nuts, and the coriander. Add the dressing and toss the ingredients together.
- Serve immediately. You can top with additional ingredients as desired upon serving.
- Leftover salad should be refrigerated in an air tight container.
- Tip: If desired you can add a little heat, such as crushed chili pepper, Sambal Olek or other spicy sauce to your liking.
