I say that because we are heading into a season of party going and entertaining.
As a result, there are people asking what to serve for vegan diet followers.

Cauliflower is always a good choice for an appetizer as far as I am concerned.

Whether you choose to serve cauliflower on a veggie tray or prepare it like in this recipe.
This recipe for buffalo style cauliflower can really be served just like you would serve a buffalo style chicken too.

Here is how to prepare the cauliflower for this recipe.

To make this recipe you will need one head of cauliflower.
Choose an average sized cauliflower that has no spots on it and is also firm to the touch.

Break off the florets when your are ready to roast the cauliflower.

Rinse the cauliflower in cold water, I prefer to soak mine for a few minutes before rinsing.
Allow the cauliflower to drain and then use a paper towel or clean kitchen towel to pat the florets dry.

Tips for making this roasted cauliflower recipe.

I just mentioned that you should rinse your cauliflower and pat it dry before using it in this recipe.
You should also break off the florets into bite sized pieces.

Here are some more great tips for you.

  1. This recipe is not for a breaded cauliflower. However, you could combine ¼-1/2 cup of flour of your choice with the seasonings along with enough water (⅓-1/2 cup) to coat the cauliflower before you roast it. The ingredient amounts for the flour and water will depend upon the kind of flour that you are using as well as the cauliflower.
  2. This recipe calls for chili seasonings. Feel free to sub in a hot sauce or other kind of seasoning as desired.
  3. Sometimes roasted cauliflower can come out mushy. To prevent this from happening, make sure that your cauliflower is dry before using it in this recipe. Also, if you choose to add flour use the least amount of water as possible.

  • ½ cup soaked raw cashews
  • ½ cup water
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 2 cloves chopped garlic
  • salt as needed
  • ¼ cup fresh parsley

How to roast the cauliflower for this recipe.

Roasting cauliflower is simple to once we prepare the cauliflower and dry it well. I suggest using a rimmed baking sheet that has been prepped for nonstick (I use parchment or foil).

Oven Roasted Buffalo Cauliflower

I mentioned above that your cauliflower should be rinsed and then patted dry. If your cauliflower is moist it may be more difficult to get crisp.

Also mentioned was that this buffalo style cauliflower can be dipped in a ranch sauce or dressing.

Ingredients needed to make Buffalo Cauliflower

  • Cauliflower- 1 average sized head. Have your cauliflower rinsed, patted dry, and broken into bite sized florets for best results.
  • Garlic- 1 clove minced or chopped.
  • Oregano– ½ teaspoon.
  • Paprika– ½ teaspoon.
  • Olive Oil– 3 tablespoons.
  • Chili Sauce or seasonings– 1-2 teaspoons.
  • Seasonings as desired.
    This can include Salt,
    and/or Pepper.

How to make Oven Roasted Buffalo Cauliflower

  • Prepare the cauliflower as described above. Make sure that the florets have been patted dry for best results. Transfer the cauliflower florets to a large mixing bowl or a large zip top bag.
  • Preheat the oven to 375 and prep a rimmed baking sheet. I suggest using a rimmed baking sheet that has been prepped for nonstick (I use parchment or foil).
  • In a medium mixing bowl, whisk together the remaining ingredients. Then pour half of it over the cauliflower, toss the cauliflower and repeat with what is left over.
  • Place the tossed cauliflower evenly spread out over the prepped baking sheet.
  • Bake for 25-30 minutes or until the cauliflower begins to brown, tossing every 10 minutes so that it bakes evenly.
