    What I like best about this Avocado Apple and Spinach Salad is that you can add so much more than those three ingredients.

    I also like that this is a salad of great flavors that work so well together.

    Avocado Apple and Spinach Salad

    This salad is the perfect balance of crunch and flavor. It is also the perfect balance of color as well.

    This recipe may remind you of my Cucumber Shepards Salad recipe.

    Both salad recipes seem to have the perfect balance of flavors. Even better, they both seem to incorporate a variety of healhty ingredients.

    This salad is especially for anyone asking can kale be eaten as a salad.

    This is because we seem to equate kale as the vegetable that most often goes into a smoothie.
    That answer, of course, is that kale can be incorporated into a salad.

    There are a couple of ways that you can prepare kale for eating in a salad.
    The easiest way to prepare your kale is to simply chop it or slice it into smaller pieces. But, some folks also like to 'massage' their kale in order to soften it up instead.

    You should also know what type of kale is best for salads.

    I just mentioned that red kale is sweeter kale and as a result, is more tolerable kale for some folks. However, I personally prefer a green salad with maybe a hint of color, such as red (from perhaps kale or tomatoes) or yellow (chickpeas).

    There are some milder kinds of kale that also work great in a salad.

    Tuscan or Lacinato kale is a mild tasting kale that less curly. This kind of kale is a good choice for a salad such as this one.

    Tips Avocado Apple and Spinach Salad

    Earlier I mentioned that the easiest way to prepare your kale is to simply chop it or slice it into smaller pieces. But, some folks also like to 'massage' their kale in order to soften it up instead.

    Here are some more great tips for you.

    1. While this salad calls for kale and spinach, feel free to use only one or substituting another green.
    2. This is more of vegetarian salad as I am adding cheese. You can omit the cheese or use a vegan cheese alternative to make this a vegan salad.
    3. This salad is best when served just after making it. I say this in part because of the apples and avocados and how they react to air. However, you could easily make the dressing ahead of time and refrigerate it until you actually use it. Allowing the ingredients to sit together can make the dressing taste even better! (opinion)

    The dressing that we are using for this recipe is an easy one to make.

    You will need vinegar as it is a vinegarette based dressing. I like apple cider vinegar in this recipe as it complements the other ingredients best.

    You will also need olive oil to make the dressing.

    To sweeten the dressing you will need honey. I am also including a bit of dijon mustard to help balance out the flavors.

    Obviously, folks have their favorite choices when it comes to apples. I like a crisp flavorful apple such as a Granny Smith or a Honeycrisp especially in a salad with spinach and kale in it.

    The ingredients needed for this Avocado Apple and Spinach Salad

    • Kale- ½ bunch. The ribs should be removed and the leaves chopped or sliced to your preference.
    • Spinach- ½ bag, cleaned and with stems removed. That should be about 2 ½ cups of packed spinach leaves.
    • Apple- 1 sliced. Honeycrisp or Granny Smith.
    • Avocado- 1. Sliced and with skin and pit removed.
    • Feta Cheese- 1 cup crumbled.
    • Walnuts- ½ cup chipped.
    • Dried Fruit- ½ cup. Such as raisins or cranberries.

    Ingredients needed for the Dressing

    You will also need to make the dressing.

    • Apple Cider Vinegar- 2 tablespoons
    • Olive Oil - 3 tablespoons
    • Honey- 1 teaspoon.
    • Dijon Mustard - 1 teaspoon.
    • Seasonings as desired. This can include Italian Seasonings, Salt, and/or Pepper.

    How to make this Avocado Apple and Spinach Salad

    • Prepare your kale, spinach, apple, and avocado as indicated.
    • Toss together the kale and spinach in a large bowl.
    • To prepare your dressing, whisk together the salad dressing ingredients in a mixing bowl. Then transfer the dressing to the large bowl and toss the kale and spinach in it.
    • Arrange your remaining ingredients over the salad and serve.
    • This salad works best when served immediatly after assembling. However, you could easily prepare the dressing in advance. Simply whisk the dressing prior to assembling the salad.
    • This salad can easily be made large by simply doubling the ingredients.
