I must say that this recipe for Broccoli Garlic Mashed Potatoes is the perfect marriage of two vegetables.

This recipe is can be described as what happens when you combine broccoli, garlic, and mashed potatoes.
If you are trying to figure out how to use some great tasting leftovers for broccoli and mashed potatoes, this recipe would be my first choice.

I could certainly serve this vegetable based side dish with my popular recipe for Mediterranean Diet style Chicken Piccata.

A great tasting chicken would be a good choice for balancing the flavors of mashed potatoes with broccoli and garlic. I would probably pair that with a nice Merlot or Chardonnay as well.

Probably the first question to ask with this recipe is what is the best potatoes for mashed potatoes.

To answer this question, you would probably need to consider how much flavor you want to be added to your dish from the potatoes and if you will be adding other ingredients that may be competing with the potato flavor. Another consideration would be the texture of the potatoes since most folks prefer a texture of mashed potatoes that is not too loose or pasty.

For this mashed potato dish I would suggest using a Yukon Gold or Russet potato.

I like that both of these kinds of potatoes have a lot of flavors that work well with garlic. Also, I like the texture of these kinds of potatoes.

Here is how to prepare the potatoes for this mashed potato recipe.

You will need about two pounds of potatoes. That is about ten Yukon Gold potatoes or six medium-sized Russet potatoes. Cheat alert- if you are using already mashed potatoes, you will need about four cups.

To prepare your potatoes first peel them.
Then cut the potatoes into quarters. To be honest, I like to scrub my potatoes and keep the skins sometimes because I like the flavor better.

Tips Broccoli Garlic Mashed Potatoes

I just mentioned that to prepare the potatoes you will need to peel them and then quarter them. Also, I mentioned that you can use up your leftover all ready mashed potatoes in this recipe and that you will need about four cups of that.

Here are some more great tips for you.

  1. Place the potatoes in the pot and then add the water to cover them. This will allow the potatoes to cook more evenly.
  2. I mentioned that it is recommended that you use Russet or Yukon potatoes in a mashed potato recipe. This has more to do with the starch content in these potatoes than anything else. It is because the starch will add to the flavor and the texture resulting in a better mashed potato.
  3. This recipe calls for heavy cream or milk. Vegan folks are welcome to use a vegan milk alternative .

Here are some tips on how to avoid having to fix mashed potatoes later on.

Yes, it is true that sometimes making mashed potatoes can end in less than perfect results.
However, most of these less than perfect results can be avoided and easily.

It is important to use the correct kind of potatoes when making mashed potatoes (hence the Yukon Gold or Russet mentioned above) as they have the starch that is needed for success.

Also important is that you place the quartered potatoes into the pot and then cover them with water. Yet, over-mashing the potatoes is usually the biggest culprit of ruined mashed potatoes so please, avoid doing this.

There are a few more tips that I have for the other ingredients in this recipe.

While fresh broccoli is always nice to have in a recipe, you could easily get away with using a bag of chopped broccoli (you will need three cups.). Also, people love their shredded cheese in their mashed potatoes which is why I am adding it as an optional ingredient.

Ingredients that you will need for this Broccoli Garlic Mashed Potatoes recipe.

  • Garlic- 2 teaspoons minced garlic or chopped. That is about 2 fresh garlic cloves.
  • Milk- ½ cup. This can include whole milk, heavy cream or Vegan folks are welcome to use a vegan milk alternative . You can even try using Greek Yogurt or sour cream. Using a combination of these is another option too.
  • Seasonings as desired- This can include Italian Seasonings, Salt, and/or Pepper.
  • Optional- shredded cheese ¾ to 1 cup.

How to make this recipe for Broccoli Garlic Mashed Potatoes

  • Prepare your potatoes as described earlier. First peel or scrub them. Then cut the potatoes into quarters. To be honest, I mentioned that sometimes I like to scrub my potatoes and keep the skins sometimes because I like the flavor.
  • Place the potatoes in large saucepan and cover with water (add salt if desired). Boil over medium heat for 10-12 minutes, until somewhat tender. Then add the broccoli and continue to cook until tender- about 5-6 minutes. Tip: instead of adding water to the saucepan, try using a flavored broth instead for more taste.
  • Turn the heat down to low and add the remaining ingredients, stirring as needed. When the ingredients appear to be mashing, about 2-3 minutes, remove from the heat and mash until you reach your desired consistency. Season as desired.
