I am not sure if it is the colors or the flavors in this salad that I like best.
Perhaps I like it because it is just so darn easy to do so.

I am sure that if you are unfamiliar with it, you may be asking what is a farro grain?
Farro is considered to be a wheat grain that is friendly to the Mediterranean diet. It is also a very nutritious food according to the experts.
Here are some of the benefits related to eating farro.
For starters, farro is a (nearly) fat free, sodium free, and cholesterol free grain. Even better, farro has protein, fiber, niacin (B3), and magnesium among other nutrients.
If you were to ask what a farro salad is made of, I would tell you that there are usually four main components to this salad.
Obviously, there is farro since this is a 'farro salad'. The other ingredients add color, texture, and taste to complement the farro.
Here are some of the ingredients that you may find in a farro salad.
The other three main components in this salad include the vegetables, the cheese, and the Mediterranean influenced dressing (think vinegar and or olive oil). Commonly included ingredients in a farro salad are sliced cucumbers, tomatoes (such as cherry or grape tomatoes), peppers, and crumbled Feta cheese. Obviously, this is a salad that can be personalized.

- While this salad is suitable for serving any time of the year, it can be personalized even more according to the season. For example, during the summer you can add fresh in-season vegetables. Corn is a popular add-in any time of the year.
- I will make a large quantity of this salad in a minimal form (basic ingredients) on a Monday. Then for each remaining day of the rest of the week, I will personalize each serving differently. Adding a couple of tablespoons to a salad such as my Kale and Roasted Chickpea Salad, is a perfect way to serve this!
- This is a great salad to make in advance. Simple store in in an airtight container and refrigerate for four to five days.
Here are some tips for cooking your farro.
Certainly, following the directions on the package is always the best way to cook your farro.
Some folks like to toast their farro before cooking it for an even better taste.

There are two basic methods of cooking farro.
One method involves cooking the farro until it has essentially absorbed all of the water or broth that is added to it. The other method is more of a pasta-like cooking method where you boil water and then drain the farro when it has been cooked. For best results, please follow the directions on the packaging itself.

Ingredients needed for this Easy Farro Tomato Salad
- Farro- 1 ½ cups cooked according to the directions. Tip: cook your farro in broth instead of water to get an added flavor.
- Tomatoes- 1 pound, cut in half. Smaller varieties such as cherry or grape tomatoes ar recommended in this recipe.
- Peppers- ÂĽ cup chopped or sliced. You can roast these before adding them if desired.
- Corn- ½ cup cooked.
- Scallions- 2 tablespoons chopped, Can sub in onions if desired.
- Optional- Cucumbers- Small seedless cucumbers work best. 1-2 cut or sliced thin.
- Garlic- 1 teaspoon minced (about one clove)
- Vinegar- 2-3 tablespoons or as desired. This can depend on the flavoring of your vinegar. Good choices of vinegar in this recipe include balsamic or a wine vinegar.
- Olive Oil- ÂĽ cup. Extra virgin preferred.
- Seasonings-This can include Italian Seasonings,
Salt, and/or Pepper. - Feta Cheese- ÂĽ cup crumbled. Can omit for vegan alternative.
- Italian Parsley or similar- 2 tablespoons or as desired for topping.
How to make this Easy Farro Tomato Salad
- Cook the farro as indicated in the directions. Drain the cooked farro and then transfer the farro to a large bowl and allow it to cool.
- Once the farro has cooled, you can toss in the tomatoes, peppers, corn, scallions, and optional cucumbers.
- Next, in a small mixing bowl, whisk together the minced garlic, vinegar, oil, and seasoining. Toss the salad ingredients in this as you pour it over the larger bowl.
- When you are ready to serve, you can top the sald with your feta cheese and parsley.
