I am really happy about this recipe for Easy Pasta in Lemon Sauce.
This is because not only am I a fan of the 'easy', I am also a fan of pasta.

I think that this pasta in lemon sauce recipe would probably go well with my Lemon Ricotta Cake recipe.
This is purely a personal thing as I am indeed a fan of lemon just about every and anything.
I must also add that I am not sure that I know of anyone who does not like pasta.
Pasta is the perfect easy to make, easy to eat, comfort food. It is also pretty hard to mess it up yet, it is almost always easy to take it up a notch (hence the lemon).

There is that ongoing question, is past good for health?
Well, this could be one of those questions that if you asked 100 different people or experts; you would probably get 101 different kinds of answers. But, followers of the Mediterranean diet know that pasta is one of those 'daily allowed' foods.
However, we also know that it is also about moderation when it comes to eating just about everything (especially the yummy things).
If you are looking for what could be an even healthier pasta, check out the whole wheat pasta choices. Even better, especially for vegans, I recently discovered pasta that is made from legumes.
There really are many types of pasta, different kinds of pasta, many of which you may never see in your lifetime.
I could have easily titled this recipe 'Fettuccine' in Lemon Sauce' but, it does not have to be made with Fettuccine. Fettuccine is a longer noodle, like spaghetti, yet wider and as a result, it can yield a heartier meal.
You could, however, make this with another kind of noodle or pasta.
This is the kind of sauce that goes with a variety of noodles.
A spaghetti type noodle (I like Angel Hair) will make for a lighter dish that is more about the taste of the sauce than that of the noodle. A shorter noodle, such has Farfalle, is a good choice for serving up smaller servings or for easier eating (it is less work to eat a smaller noodle right?).
Tips Easy Pasta in Lemon Sauce
I just mentioned that while you could make this recipe using Fettuccine pasta, there are other pasta options. You could easily make this recipe using spaghetti type noodle such as Angel Hair) or using a shorter noodle, such has Farfalle.

- My biggest tip, and especially since you can us about any pasta in this recipe, is to follow the pasta cooking directions that are on the box. Not all pastas cook in the same amount of time. Especially when it comes to the low carb pasta varieties and the legume based pastas. It is also just as important to test the pasta to make sure that it is cooked to your expectations.
- Boiling the water is pretty much essential for making (almost) every kind of pasta. Do not be afraid to boil your water. Also, be sure to stir the pasta in the boiling water.
- For most kinds of pasta, you will need four quarts of water + 1 teaspoon of salt. This is not a place to go cheap as your pasta success depends upon the water that it is boiled in.
- Drain the pasta immediately after boiling it. Then transfer it to a large pasta bowl and toss it with some olive oil to prevent sticking.
There are some modifications that you can make in this recipe to personalize it.
Make this a vegan recipe by using a vegan popular pasta such as a legume based pasta. Use a vegan broth as well.
Here are some more ways to personalize this pasta recipe.
- Instead of broth, add heavy cream or Greek Yogurt to make this a creamy pasta recipe instead (or you can go half and half with the ingredients).
- Another great idea, in my opinion, would be to sub in some wine for the broth (white, such as chardonnay) works best).
- Adding a bit of shrimp or vegetables such as mushrooms can turn this into a great meal to share with your guests.
The seasoinings can be personalized as well.
However, if possible, please stick with fresh herbs when it comes to seasonings. The same goes for lemon juice too.

For example, instead of broth, add heavy cream or Greek Yogurt to make this a creamy pasta recipe instead (or you can go half and half with the ingredients). Another great idea, in my opinion, would be to sub in some wine for the broth (white, such as chardonnay) works best).

- Olive Oil - ½ cup divided.
- Broth- ½ cup. Any flavor is fine. Alternatively, you can use leftover water used to boil your water in.
- Lemon Juice- 2 -3 tablespoons. That is about one- two average sized lemon juiced. You could increase this up to ½ cup depending on how fond you are of lemons.
- Minced Garlic - 1 teaspoon. That is about one clove.
- Chopped Herbs- ¼ cup. Such as basil and or oregano.
- Seasonings as desired. This can include Italian Seasonings, Salt, and/or Pepper.
- Grated Parmesan Cheese- ½ cup. Can omit.
Howto make this Easy Pasta in Lemon Sauce
- Start by cooking the pasta as directed on the package or to your preferences. Drain and toss the pasta in a quarter cup of the olive oil. Reserve a cup of the water for possible later use. Transfer the pasta to a large bowl.
- For the sauce, over medium heat in a small or medium saucepan, combine together the remaining olive oil, broth, lemon juice, minced garlic, and any seasoning as desired. Heat this for 10 minutes or as needed to heat, adding additional liquid if desired to thin it out.
- Toss the pasta in the heated sauce, adding the sauce in small amounts at a time (¼-1/3 cup at a time) until you reach your desired consistency for serving. You do not have to use up all of the sauce.
- Top with the herbs and cheese and serve.
