I like that these muffins can be made with whole wheat flour.

This seems to me to be a healthier way to make a muffin just because of the wheat flour and bananas that are in it.
What is really important to me is that this recipe is friendly to the Mediterranean diet.
This is a lot like my recipe for Mediterranean Diet Whole Wheat and Oatmeal Muffins.
However, that recipe also included oatmeal in it. Also different is that this recipe has bananas in it.

You may be wondering what bananas do in baking.
To be honest, bananas do a whole lot more than just add taste to a recipe. Certainly bananas add that potassium that they are so famous for when they are added to anything.
However, in this recipe we will use bananas as our fat.
That is, bananas will replace the butter or oil that may normally be added to a recipe.
I should also mention that while this recipe calls for an egg, you could also add an extra quarter cup of mashed bananas and omit that egg. 🙂
There are some differences between using whole wheat and using all purpose flour.
That is, there is a difference in the baking results that you can expect to notice when you use whole wheat rather than the usual all purpose flour. But, you can still get a great tasting muffin, as you will see in this recipe.
Whole wheat flour is a more fibrous (and healthier for many of us as a result) flour.
That is, it has been processed less and as a result, whole wheat flour has held on to its fiber. The result of holding on to this fiber is a more dense result, especially in muffins and breads. Personally, I like this as the fiber causes the bread and muffins to make me feel fuller faster and for a longer duration of time.

I mentioned above that we are adding the mashed bananas for both taste and as the fat. Also, I mentioned that mention that while this recipe calls for an egg, you could also add an extra quarter cup of mashed bananas and omit that egg.

- I mentioned that this recipe calls for topping these muffins with nuts. One really nice result of topping these muffins is that it will make the muffins look more professionally made and of course, yummier to the eye.
- Resist the urge to fill the muffin cups more than ¾ full. Doing so can cause your muffins to bake over the edges of the cups and onto the pan, a pain to clean up.
- Make your muffins more impressive by using an extra large muffin pan or extra small or mini muffin pan.

The ingredients needed to make these Whole Wheat Banana Muffins

How to make this recipe for Whole Wheat Banana Muffins.
- Preheat your oven to 375. Also, prep your muffin pan using muffin liners and/or nonstick .
- In a mixing bowl , use a fork or whisk to mix together the flour, baking soda, and cinnamon.
- Next, in a large mixing bowl, blend together the mashed bananas and sugar (included alternative substitutes that you choose).
- For the next step, we will add the dry ingredients from the first bowl to the mixing bowl. Do this by adding half of the dry ingredients at a time, stirring gently between additions. Then add the vanilla extract, egg and milk.
- Fill your muffin cups ½ to ¾ full. You can drop all or some of the chopped walnuts into each cup. Another option is to wait until the muffins are almost done to add them to the top. You can also sprinkle any optional chia or flax on top as well.
- Bake your muffins for 20-22 minutes or until a toothpick comes out clean. Allow your muffins to cool.
- Please note that baking times and results may vary depending on the ingredients that you have chosen to use in this recipe. I would keep an eye on them while they are baking if you have any worries.
