Baking these muffins with whole wheat flour really adds a lot to the taste of them.
I can certainly see why people like their whole wheat baked goods.
 

Also, I like what oatmeal can bring to a recipe such as this one.
Oatmeal seems to make everything taste more moist or lush in my opinion. However, more importantly, oatmeal brings a lot of health benefits as it is recommended by the experts.
 



Because the two main ingredients in this recipe are whole wheat and oatmeal, we can easily make these muffins Mediterranean Diet friendly.

The Mediterranean Diet stresses avoiding processed foods especially flour. However, whole wheat flour is not processed and is thus, promoted on the diet.

I will say that these muffins should provide you with some great energy.
That energy from the whole wheat flour and the oatmeal is the kind of energy that lasts a while too. In addition to the energy, these muffins should keep you pretty full for a while too.

This is certainly one of those Mediterranean diet recipes that anyone could enjoy.

Muffins like these make for really delicious Mediterranean diet recipes breakfasts. There are not a lot of muffin recipes that can say that.

I will explain about the benefits into more depth in a moment. However, the whole wheat and oatmeal can make these muffins even better for people to eat!

As mentioned, we will be using whole wheat flour in this recipe.

Whole wheat flour is preferred to other flours because it is packed with nutrients. Those nutrients include protein, fiber, antioxidants, and B vitamins. This kind of whole and unprocessed wheat flour is also low in fat.

The recipe for Whole Wheat Sugar Free Oatmeal Muffins

As mentioned, you will need whole wheat flour which you can easily find online.

Also, you will need Old Fashion Oats.
You can find Old Fashion Oats online too. These oats are sometimes called ‘Rolled Oats’. Using quick oats will affect the texture as well as the end product of making these muffins. As a result, I suggest not using the quick variety of oats in this recipe.
 

What you will need to make this

Make these muffins jumbo sized using one of these jumbo sized muffin pans. Or, you can make these into mini muffins using one of these mini sized muffin pans!
 

  • Whole Wheat Flour– 1 1/2 cups.
  • Ground Cinnamon– 1 teaspoon
  • Baking Powder– 3 teaspoons.
  • Old Fashion Oats – 1/2 cup.
  • Sugar Alternative- Equivalent to 1/2 cup of sugar. I suggest using one that is 1:1 in volume with sugar and is granular for best results. Use a natural alternative to sugar because sugar is a big ‘no no’ on the diet. Avoid the artificially made sugar alternatives if possible.
  • Milk- 3/4 cup. Use a almond nut milk that has no sugar added to it if you want to make this more Mediterranean Diet Friendly.
  • Vegetable Oil- 1/2 cup. Can sub in apple sauce to keep this recipe more Mediterranean diet friendly. Also, any oil that is plant based. Sunflower Oil is one such example of a plant based oil that is friendly to the Mediterranean diet.
  • Egg-1.

  • Preheat your oven to 375 and prep your muffin pan for nonstick.
  • In a mixing bowl whisk together your flour, ground cinnamon, and baking powder. Then stir in the oats and sugar alternative.
  • Next, in a medium to large bowl, blend together the milk, vegetable oil and egg. Then, fold this mixture into the first bowl with the dry ingredients.
  • Bake these muffins for 25-28 minutes or until a toothpick comes out clean. You can sprinkle a few extra oats on the top to make these muffins even prettier. Also, allow these to cool before serving.

These amazing tasting Mediterranean Diet Whole Wheat and Oatmeal Muffins are so filling, healthy, and easy to make for breakfast.

Ingredients

  • Whole Wheat Flour– 1 1/2 cups.
  • Ground Cinnamon– 1 teaspoon
