This recipe is lower in carbohydrates and calories than regular mashed potatoes.
It seems like cauliflower has really taken on a lot of the 'big carb' ingredients lately to make decent alternatives. This recipe is just one example of that.
Being a vegetable, you may be wondering if cauliflower is good for you.
I was surprised to learn that an average head of cauliflower has nearly five times the daily requirement for Vitamin C. Cauliflower is also a great source for Vitamen B-6 and potassium.
Perhaps, when it comes to nutrients, cauliflower is best known for its fiber content.
We know that fiber is essential to a healthy diet. However, folks on a low carbohydrate diet know that fiber helps knock down the carbs in food.
Here is how to prepare your cauliflower for this recipe.
Select a firm head that is as white as possible without discoloration. Remove the outer leave and then the stem.
Cook the cauliflower to get it soft enough for mashing,
To cook it simply place it in a pot of boiling water for 5 ½- 6 minutes or until tender.
You will then need to drain the cooked cauliflower and pat it dry with paper towels.
Tips for making Cauliflower Mashed 'Potatoes'
I just mentioned that you should select a firm and healthy head of cauliflower for this recipe. To cook the cauliflower simply place in in boiling water for about six minutes or until it is tender.
Here are some more great tips to help you make mashed cauliflower with garlic.
- Do not allow the cauliflower to completely cool after cooking. If it is still warm it will be easier for you to mash it up.
- If you are in a pinch for time, try using cauliflower rice instead of cooking up your own cauliflower.
- You can add a tablespoon of Greek Yogurt to this recipe to make the consistency even smoother.

- Meanwhile, roast the garlic as described above. Start by preheating the oven to 350 and lining a baking sheet with aluminum foil . Crush the garlic and place it on the baking sheet then drizzle some olive oil over the garlic and roast until tender (12-15 minutes).
- Use a food processor, immersion blender or Vitamix. Puree the warm cauliflower with the other ingredients until you reach your desired consistency. Add any optional ingredients as needed.
