Not only are these carrots healthy, they are also really tasty to eat.

Once roasted, these carrots take on a whole new taste.
Not that there was anything wrong with carrots in the first place of course.

To be perfectly honest, I have always been a fan of the carrot.
This is because not only are carrots healthy for you, they also taste like their own kind of candy in a way.
And really, if you think about it, candy tasting healthy anything is a rare find if you ask me.

Roasting vegetables is one really great way in which to prepare them.

In the case of this recipe for roasted carrots this is especially true.
This is because roasting the carrots really brings out a great taste that you do not get from eating the carrots raw.

This recipe for honey roasted carrots is a simple one in more than one way.

This recipe is simple in that there are not a lot of ingredients that are needed in it.
Also, this recipe is simple as once the ingredients have been combined together, roasting them is a simple process.

I am using honey to sweeten the carrots in this simple recipe.

Obviously, honey is a healthy and natural sweetener, which is something that I like as I am not a huge fan of eating a lot of processed sugar. However, there are a lot of benefits that come with honey as well.

We have been told by the experts that honey is an antioxidant which is good for us.

But, as you may have heard, honey can fight infections and can help us heal certain conditions. Also, I have been told that eating local honey can help me deal with local allergens as well. So, there is a lot to be grateful for when it come to our bees and what they can do for us.

One concern that I had with this recipe for roasted carrots was that it could come out tasting too sweet.

After all, we are roasting them with honey. Also, carrots seem to come with a bit of their own sweetness to.

In order to balance out the sweetness potential of this recipe, we will add a bit of seasoning to taste.
Adding a teaspoon of salt is one way to balance out the sweet taste of these carrots. However, there are some great salt free seasonings that would work great in this recipe.

This recipe works well using whole carrots.

I do recommend scraping or peeling off the outer layer of the carrots first. Then slice the carrots lengthwise in half.

As mentioned, we will use using honey to sweeten the carrots in this simple recipe. Also, Adding a teaspoon of salt is one way to balance out the sweet taste of these carrots. However, there are some great salt free seasonings that would work great in this recipe.

This recipe works well using whole carrots.
I do recommend scraping or peeling off the outer layer of the carrots first. Then slice the carrots lengthwise in half.

Honey Roasted Carrots

This recipe pairs especially well with a robust or rich Merlot or Zinfandel.

Here is what you will need to make your honey roasted carrots.

  • Carrots- two pounds (about 14-16 average sized carrots). Have your carrots scraped and sliced lengthwise in half. You can leave the ends on for roasting.
  • Olive Oil– 2 tablespoons.
  • Honey– 2 tablespoons.
  • Salt/pepper- to taste and can be omitted.
  • Salt Free Seasonings – 1-2 teaspoons. Good choices include thyme or rosemary.

Honey Roasted Carrots

  • This is one of those recipes in which a blackened (older) baking sheet works especially well with. You can give yours a quick nonstick spray squirt if you would like to. Also, preheat your oven to 400.
  • On you baking sheet, lay out the carrots sliced side down. The sliced side is flat and will thus stay in place better than the rounded side.
  • Evenly disburse the honey over the carrots. You can use a spoon to drizzle the honey to do this. Cover the carrots as evenly as possible including the underside.
  • Now, in small bowl, whisk or use a fork to mix together the oil and the seasonings. Then pour this mixture over the carrots.
  • Roast your carrots until they begin to brown and seem to caramelized. This should be about 30-35 minutes.
  • Season as desired and serve.
