The easiest way to obtain aquafaba is to simply drain it from a can of chickpeas.
I also mentioned that you can make this recipe not vegan.
Making this recipe friendly to the Mediterranean diet can howewver be as easy as using homemade mayonnaise with the garlic and seasonings.
Simply use my recipe for How to Make Homemade Mayonnaise along with the salt and garlic.
Ingredients Needed to Make Vegan Mediterranean Diet Aioli
- Aquafaba- 3 tablespoons. You can find chickpeas in a can here. Simply reserve the needed amount of liquid from that.
- Garlic- 2 cloves, minced or crushed. Feel free to adjust this to your tastes.
- Canola or Vegetable oil- 1 cup. Feel free to sub in olive or other oil for all or part. Can use other Mediterranean diet friendly oil such as canola oil, flaxseed oil, or sunflower oil.
- Seasonings as desired
This can include Italian Seasonings,
Salt, and/or Pepper. - Optional- I mentioned above that aioli can be personalized. Adding a half teaspoon to a teaspoon of Dijon mustard is a nice way to add an interesting flavor to traditional aioli sauce. Adding a teaspoon or two of lemon juice, hot sauce, or even salsa can really make this a good tasting sauce.
How to Make Aioli.
- In a blender on a slow speed, combine together the aquafaba and the garlic. You can add salt or seasonings however, reserve some for later for taste adjustment.
- For the oil, I suggest drizzling it slowly into the blender so that you can control the consistency of the aioli via the amount of added oil. Howewver, you may not need all of the oil for the consistency of aioli that you desire (for a dip you may want yours to be thick while as a dressing you may want it thinner).
- Tip for best results: Keep the blender running constantly and VERY slowly drizzle in the oil. Make sure that the added oil is fully combined with the aquafaba as you go. (If you add the oil too fast, your aioli will turn loose and isn't redeemable since we cannot add eggs to thicken it). Also, if you find you're getting a bit of oil on the top, stop adding the oil and just blend for a little while before continuing. .
- The aioli will suddenly turn thick when it is done. You can thus stir in any optional ingredients such as additional seasonings, lemon juice, or Dijon mustard.
