Vegan Mediterranean Diet Aioli Garlic Sauce is a nice alternative to the usual aioli sauce.

What makes this aioli sauce so different is that it is not made with eggs or mayonnaise.

This recipe is based upon a classic Mediterranean staple.
However, this recipe is made without adding any egg products.

However, there are a lot of good ways to enjoy aioli sauce.

This recipe is for anyone asking what is aioli made of.

Technically, aioli is made with olive oil, garlic, and some salt or seasonings.
Many versions of aioli do include eggs or mayonnaise in them.

There are some ways to make variations of the traditional aioli sauce.

Adding a half teaspoon to a teaspoon of Dijon mustard is a nice way to add an interesting flavor to traditional aioli sauce. Adding a teaspoon or two of lemon juice, hot sauce, or even salsa can really make this a good tasting sauce.

This recipe is for anyone asking how do you make aioli sauce from scratch.

Honestly, this is not a hard recipe to make.
However, some folks may be a bit slow on catching on to aioli because they simply are not familiar with how many ways that it can be enjoyed.

Basic aioli sauce has just a few simple ingredients.

But, when you add the egg or mayonnaise, as well as seasonings or other ingredients, to aioli you introduce both texture and flavor. As a result, you get so many uses for your dip.

Tips for making aioli sauce.

I mentioned above that adding eggs or mayonnaise can is a popular way to make an aioli that is really like a sauce. Also mentioned, you can introduce other ingredients, such as lemon juice or Dijon mustard, for more flavor.

Here are some more great tips for you.

  1. Traditional aioli is made using a mortar and pestle. The aioli is made by mashing the garlic with some salt and then adding the other ingredients a bit at a time. We are using a blender for this recipe as it is easier and because of the ingredients that we are using.
  2. Vegetable oil is a popular choice of oil to use in aioli. However, feel free to use another more flavorful oil, such as Olive oil for all of the vegetable oil or for part of it.
  3. While this is meant to be a vegan recipe, that is made without adding eggs you can easily make this a recipe that is not vegan. Simply use my recipe for How to Make Homemade Mayonnaise along with the salt and garlic.

This recipe is for anyone asking what is aquafaba used for.

Technically, aquafaba is the juice from beans, such as chickpeas.
Aquafaba is used by vegan diet followers as a replacement for eggs in recipes such as this one.

There are two ways to get aquafaba.

If you are cooking chickpeas on the stove or in a slow cooker, simply save the leftover water to use as aquafaba. However, the easiest way to get aquafaba is to simply drain a can of chickpeas and save that liquid to use in recipes like this one.

How to use aioli sauce.

Aioli sauce is usually served as a dip or as a sauce. However, I have seen aioli used just like you would use mayonnaise.

I mentioned above that you will need aquafaba to make this aioli.
The easiest way to obtain aquafaba is to simply drain it from a can of chickpeas.

I also mentioned that you can make this recipe not vegan.
Making this recipe friendly to the Mediterranean diet can howewver be as easy as using homemade mayonnaise with the garlic and seasonings.

Ingredients Needed to Make Vegan Mediterranean Diet Aioli

  • Aquafaba- 3 tablespoons. You can find chickpeas in a can here. Simply reserve the needed amount of liquid from that.
  • Garlic– 2 cloves, minced or crushed. Feel free to adjust this to your tastes.
  • Canola or Vegetable oil– 1 cup. Feel free to sub in olive or other oil for all or part. Can use other Mediterranean diet friendly oil such as canola oil, flaxseed oil, or sunflower oil.
  • Seasonings as desired
    This can include Italian Seasonings,
    Salt, and/or Pepper.
  • Optional- I mentioned above that aioli can be personalized. Adding a half teaspoon to a teaspoon of Dijon mustard is a nice way to add an interesting flavor to traditional aioli sauce. Adding a teaspoon or two of lemon juice, hot sauce, or even salsa can really make this a good tasting sauce.

How to Make Aioli.

  • In a blender on a slow speed, combine together the aquafaba and the garlic. You can add salt or seasonings however, reserve some for later for taste adjustment.
  • For the oil, I suggest drizzling it slowly into the blender so that you can control the consistency of the aioli via the amount of added oil. Howewver, you may not need all of the oil for the consistency of aioli that you desire (for a dip you may want yours to be thick while as a dressing you may want it thinner).
  • Tip for best results: Keep the blender running constantly and VERY slowly drizzle in the oil. Make sure that the added oil is fully combined with the aquafaba as you go. (If you add the oil too fast, your aioli will turn loose and isn’t redeemable since we cannot add eggs to thicken it). Also, if you find you’re getting a bit of oil on the top, stop adding the oil and just blend for a little while before continuing. .
  • The aioli will suddenly turn thick when it is done. You can thus stir in any optional ingredients such as additional seasonings, lemon juice, or Dijon mustard.
