This recipe is for anyone wondering what sweets can you eat on the Mediterranean diet.

The Mediterranean diet tells us that we should avoid foods such as butter and refined sugars.
Instead, we should eat foods, such as these cookies, that are made with alternatives instead.

The Mediterranean diet stresses foods eaten in moderation.

That would include dark chocolate chips, which are included in this recipe and in moderation. By the way, you can even find dark chocolate chips with no added sugar to them!

  • Follow the directions in the recipe. They are there for a reason and not for word filling.

  3. It can be tricky to tell when these cookies are done baking because of the ingredients that are used. When they are done they will still be soft. If you are unsure, try moving one and if it feels like it is holding its shape then they are most likely done baking.

Ingredients needed to make Mediterranean Diet Vegan Chocolate Cookies

  • Almond Meal– 1 cup.
  • Baking Soda– 1 teaspoon.
  • Baking Powder– 1 teaspoon.
  • Salt- 1/4 teaspoon.
  • Black Beans– 1 1/2 cups cooked and cooled.
  • Canola Oil– 1/4 cup.
  • Agave Nectar– 1/2 cup. You can use maple syrup instead.
  • Unsweetened Cocoa Powder– 1/2 cup
  • Lemon Juice- 1 teaspoon.
  • Dark Chocolate Chips– 1/2 cup.

How to make Mediterranean Diet Vegan Chocolate Cookies

  • Preheat the oven to 350 and prep a baking sheet with parchment paper.
  • In a medium mixing bowl, use a whisk or a fork to blend together the almond meal, baking soda, baking powder, and the salt.
  • Next, use a food processor or strong blender to blend together the black beans, canola oil, agave, unsweetened cocoa powder, and lemon juice.
  • Transfer the contents from the food processor to a mixing bowl and stir in the dry ingredients from the first bowl. Then fold in the chocolate chips.
  • Use a scoop to scoop the batter into small balls to place on to the prepped cookie sheet. Add additional chocolate chips to the tops of the cookies if desired.
  • Bake these cookies for 15 minutes or until they are done baking. When they are done they will still be soft. If unsure, try moving a cookie and if it feels like it is holding its shape then they are done. Allow the cookies to sit on the baking sheet for a few minutes before removing.

  • Almond Meal– 1 cup.
