    This recipe however, is also a vegan diet friendly dessert.

    This recipe is especially for anyone asking what desserts can vegans eat.

    The quick answer is anything that does not come from animal byproducts.
    Thankfully, there are plenty of yummy foods (ahhh...chocolate) that fall into that category.

    You may also be wondering what does vegan dessert mean.

    Well, we know that in sugar free desserts there is no added sugar (although, some folks are okay with sugar from maple syrup or fruit).
    However, when it comes to vegan it usually means that there is no dairy (milk, butter, eggs, etc.) added to the recipe.

    I should also mentioned that the crust for this recipe is optional.

    If you choose to use a crust with this recipe, I have provided a recipe below that you can use,
    But, you are also welcome to use your own favorite (Mediterranean diet friendly) crust recipe as well.
     

    How to make a vegan, Mediterranean diet friendly and nut based pie crust.

    This is a simple recipe that can be made in a food processor or using a strong blender. Feel free to use this crust or the crust of your choice in this recipe.

    Here is what you will need to make the crust.

    Nuts (I like pecans or walnuts) 1 ½ cups, unsweetened cocoa powder 2 tablespoons, and dates ½ cup pitted (about 8). Process these ingredients until you get a fine to crumb-like texture ( few minutes) and then press it into a round pie dish or springform pan. Freeze this while you work to allow it to firm up.

    Tips for making a Mediterranean diet friendly pie/

    I mentioned that you can easily make your own vegan crust for this pie. Also, you can omit the crust or use your favorite crust recipe for this pie (Mediterranean diet friendly).

    1. While this cake is decadent in its own, you could easily make it better by adding to it. The recipe offers a ganache topping however, you could easily add chopped nuts of even coconut to the top of your chocolate cake (or pie).
    2. This cake will keep frozen for up to six months if properly stored. However, keep in mind that this can affect the texture of the cake. I suggest allowing it to sit at room temperature for twenty minutes or so before serving.
    3. While this recipe can be made as a cake using a springform pan or a pie using a pie dish, you could make this into individual servings. Simply use a cupcake pan or ramekins to make your dessert in.

    I know that someone will ask me what can you substitute for tofu.

    I get that not everyone is excited about tofu or not a follower of the vegan diet.
    Tofu is meant to be a close to perfect non-dairy alternative (in a recipe such as this one) to dairy products.

    The good news is that yogurt is a good alternative that can be used in this recipe.

    You will probably have the best luck not using a nonfat or flavored yogurt as far as texture and flavor goes.
    Also, you may need to make adjustments to the flavor to compensate for the tart flavor of most yogurts.

    How to make a nut based sugar free crust.

    You will need 1 ½ cups of walnuts or pecans plus three tablespoons of butter (neutral flavored oil could possibly work for at most half of the butter) and the sugar alternative that is equivalent to 1 ½ tablespoons of sugar. Process these ingredients in a food processor or using a strong blender until you get a fine to crumb-like texture ( few minutes) and then press it into a round pie dish or spingform pan. Freeze this while you work to allow it to firm up.

    Homemade Vegan Chocolate Tofu Pie

    I mentioned that you can easily make your own crust for this pie (two recipes listed). Or, you can omit the crust or use your favorite crust recipe for this pie (Mediterranean diet friendly).

    I also mentioned that there is an alternative to using tofu in this recipe.

    Plain unsweetened (fuller fat if possible) yogurt is a good sub in for tofu. However, you may need to make adjustments to the flavor to compensate for the tart flavor of most yogurts.

    Ingredients needed to make this Vegan Chocolate Tofu Pie.

      • Crust- one. Recipe(s) shown above. Feel free to omit the crust if desired.
      • Tofu- one 12- 12.3 ounce firm and silken container.
      • Sugar Free or low fat Chocolate Chips- 1 ½ cups. Make sure that they are vegan chocolate chips if you want to keep this pie vegan.
      • Vegan Milk- ½ cup. I like coconut milk regular low fat milk, or almond milk for this recipe. Please use sugar free for sugar free version if possible.
      • Nut Butter- ½ cup.
      • Optional- shaved low fat chocolate for the topping.

      How to make this chocolate Mediterranean diet friendly pie.

      • Prepare the crust as instructed. Press the crust into a pie dish or springform pan (I like prepping with nonstick of using parchment paper). Place the crust in the freezer or refrigerator to firm up while you work.
      • In a double boiler or the microwave, melt the chocolate chips. To microwave, simply use a microwave safe mixing or similar bowl to melts, stopping to stir every 30 seconds. Allow this to cool for while you start the next step.
      • Use a blender immersion blender or food processor to blend the milk and the nut butter. Then add the melted chocolate and blend until smooth. Transfer this to the prepared crust and refrigerate for two hours before topping with the shaved chocolate.
      • Refrigerate until firm before serving (at least an hour).
