This recipe is especially for anyone asking what can I make with mashed bananas.

The good news about mashed bananas in this recipe is that the older the banana, the better it mashes.
I find that recipes such as this one are a great way to use up those older bananas.

But, what you should know is that bananas do more than add flavor when they are added to cookie recipes.

Bananas add structure and well as make for a good substitute for other ingredients that may be important to a cookie recipe. In this recipe, bananas serve as substitute for both the eggs and the butter that would normally be added to a cookie recipe.

People ask what cookies are vegan.

Vegan cookies are made without ingredients that have come from animals. These ingredients would include eggs, milk chocolate, or butter.

You may also be wondering if vegan cookies are good for the Mediterranean diet.

The Mediterranean diet shares with the vegan diet an emphasis on healthy ingredients and natural plant based fats such as vegetable oils. Ingredients that are popular in both diets include oatmeal, bananas, and nut based butters.

Tips for making vegan Mediterranean diet friendly cookies.

I mentioned that mashed bananas are important to a recipe such as this one.
The best bananas to used for mashing are the older bananas that are already soft.

Here are some more great tips for you.

  1. This recipe calls for a few basic ingredients. Feel free to add additional ingredients such as dried fruit like raisins.
  2. Peanut butter is a big part of this recipe. Feel free to use a sugar free peanut butter or another kind of nut butter if you prefer to.
  3. Amp up your cookies by adding shredded coconut, vegan chocolate chips, or chopped nuts.*

*Adding optional ingredients may mean that you will need to adjust other ingredients to help these cookies stick together, retain their texture or even have a good taste.

There are a few things that you should know about these vegan cookies.

Because there is not a lot of fat in these cookies, they may burn faster in the oven. I recommend keeping a close eye on them while they are baking. Adding a bit of peanut butter can help with this and add to the taste.

You may also need to shape your cookies to your liking.

I say this because some folks prefer a fatter cookie while others like a flatter cookie. Because of the oatmeal in these cookies, they tend to take on a different shape than you may be used to.

Knowing how to store these cookies correctly helps to keep them longer.

These cookies should be stored in an airtight container. Store them in a cool place, such as a refrigerator.
